7. Peach Basmati Rice Salad Toast a few
whole cloves and cumin seeds in a little
oil in a saucepan. Stir in basmati rice, add
water and cook according to package.
Toss with chopped peaches and serve as
a cool side to a spicy main dish.
8. Steaks with Peach Sauce Pan-fry a pair
of steaks; set aside. Add sliced peaches
to the hot pan. After a minute or so pour
in half a cup of red wine. Shake and swirl
pan to deglaze; cook until wine is
reduced by half. Sprinkle with thyme and
spoon over steaks.

10. Pickled Peach Relish At least a day
before a cookout, heat about a quarter
cup of cider vinegar with 2 tablespoons
of sugar and
hefty pinches of celery
seeds, mustard seeds, and crushed red
pepper. Stir in a couple of chopped
peaches. Refrigerate overnight. Serve
alongside hot dogs ana
burgers.
11. Peach-Wheat Berry Salad For a simple
salad, toss chopped peaches with cooked
wheat berries, scallions, and equal parts
olive oil and lemon juice.
